Lime and Chocolate Cake

Having a versatile sponge recipe is so useful! In my opinion Kate Fords vegan sponge recipe is the best around and that is what this version have evolved from.

 

Ingredients

  •  dairy-free margarine)vitalite (or similar200g

  • 300 g golden caster sugar

  • 200 g Alpro vanilla soya yoghurt or similar

  • 200 ml dairy-free milk

  • 3 tsp lime juice 

  • Grated zest of one lime

  • 400 g self-raising flour

  • 2 tsp baking powder

  • Lime Marmalade for the middle

  • Plain chocolate bar, grated to top (or chocolate frosting if you prefer!)

 

Preheat the oven to 180C . Grease and line two 20cm or 22cm cake (sandwich) tins.

Beat the vitalite and sugar together for 3-4 minutes, until pale and fluffy.

In a separate bowl mix the yoghurt, soya milk, and the lime juice, then beat again until mixed. Beat into the creamed vitalite/sugar mix. (If the mixture looks 'curdled' just add a few tablespoons of the flour to the mix and beat again - this is quite normal). Add the flour and baking powder, and slowly fold it into the mixture, until fully combined.

Divide the mixture between the two tins, and bake for 20-22 minutes until an inserted skewer or knife comes out clean. Then remove from the oven and turn out onto a cooling rack.

I used Roses Lime and Lemon marmalade in the middle, and melted more to glaze the top. I then sprinkled grated dark chocolate and lime zest over the whole thing.
