Super Easy Chili

We use our Remoska a lot! Its great for cooking up big batches of food to see us through a few days at a time. This recipe makes a substantial batch of veggie chili, which can be served with rice, on toast, in tortilla wraps or on top of a jacket potato! Although I'm cooking this in our Remoska, it can easily be made in a heavy bottomed frying pan.


  • 1 large red onion

  • 1 bag frozen soya mince

  • 1 chopped bell pepper

  • 1 can kidney beans

  • 2 cans chopped tomatoes

  • 1/2 tsp each of :

  • Cumin

  • Chilli Powder

  • Chilli Flakes

  • Smoked Paprika

(I also sometimes add a healthy splash of Port to add richness)

                                                               Blend the spices together in a small dish. 


                                                               Cook the onion until it begins to soften.

                                                               Then add the bell pepper and frozen mince. Allow to heat until the                                                                 mince thaws enough to break it up. 
Add all the other ingredients,                                                                    including the Port if using, until it’s cooked through and bubbling.                                                                 That’s it. And that’s why I love my Remoska! (If you're making this                                                                   on the hob, set over a medium heat and keep the lid on to retain                                                                     moisture.)

Serve as desired. It’s also good with a healthy handful of grated cheese on top of any of these ways of serving. It can be re-heated over consecutive days.
